I recently saw an image of roasted strawberry jam with balsamic vinegar. Looked amazing, but strawberries have been so good lately I did not want to hide any of the flavor. This is what I came up with. It’s very small batch.
1 lb cleaned and quartered strawberries
1/4 cup sugar
1/2 teaspoon vanilla
Zest of half a naval orange
1. Mix together strawberries, sugar, vanilla and zest. Set on counter for 20 minutes.
2. Preheat oven to 250 degrees.
3. Place strawberries into ceramic baking dish. Roast for 2 hours.
4. Carefully pour strawberries and all juices into blender. Blend to desired chunkiness.
5. Refrigerate.
This morning, I topped my yogurt with this jam, pistachios, fresh strawberries and mint.
Yesterday, I added this to my pancakes.
