We make our own pizza at home. Its so easy and so good, and seriously tastes so much better. I found a recipe on NYTimes Cooking for Roberta’s Pizza Dough. Its a great recipe, we found we like a bit more substance to our crust. I made a change, semolina.
Ingredients
154 grams of 00 flour
154 grams of all-purpose flour
8 grams fine sea salt
200 grams of lukewarm water
2 grams active dry yeast
4 grams extra-virgin olive oil

*For yeast, I use Saf Instant Yeast. I have used grocery store yeast, but this is worth it. https://www.surlatable.com/product/PRO-1189869/Saf-Instant+Yeast
Steps
- In a large bowl, mix together flours and salt.
- In a small bowl, stir water, yeast and olive oil. Let set for a minute our two. Then pour mixture over the flour. Knead for 3 minutes. It will be sticky. Rest for 15 minutes.
- Knead for 3 more minutes. Cut into two pieces and roll in semolina. Let rise for 3 hours at room temp.
- Heavily sprinkle surface with semolina, then roll out dough.
From there, we like to grill our pizza. Just turn on the grill and put the dough on for about 90 seconds. Then flip it and top with your sauce, cheese and toppings. Keep on the grill for about 3-5 minutes depending on toppings.
We also love to use cast iron, turn on the oven to 450. Heat your cast iron for about 20 minutes then carefully add your dough, sauce, toppings, etc. Cook for about 10 minutes.
Couple of other things we have learned along the way. Dough, sprinkle of cheese, and then sauce…this layer of cheese will help keep the dough from getting soggy.
Also, looking for a healthier, after your sauce, add a bag of spinach, then cheese and sauce. It will create a huge mound. This will cook down to a nice flat pizza.
Finally, cook your toppings before adding to the pizza. Seriously mushrooms and onions are so much better if they are cooked first.
