Pasta Salad

This is all about ease for me and I take some shortcuts, but really focused on keeping it simple.

1 pound of penne pasta

1/2 pint halved cherry tomatoes

1/2 red onion thinly sliced

1/2 bell pepper chopped

1 bag of spinach

1/3 cup halved Castelvetrano olives

1 pack of Italian salad dressing (make per instructions, but use pasta water instead of regular water)

Chopped Cheese and Cured Meat (my favorite combinations are salami/mozzarella or prosciutto/truffled gouda)

  • Cook pasta per packaging instructions. Allow pasta to cool to room temperature. Save pasta water for dressing.
  • While pasta is cooking, prep all other ingredients, except dressing. Toss together in a bowl.
  • Then add pasta and dressing to bowl and toss everything together. Enjoy.
