Roasted Beet Salad with Feta and Bacon Vinaigrette

1 head of romaine chopped

3 beets chopped

1/4 cup of chopped walnuts

1/2 thinly sliced red onion

Crumbled Feta (to your liking)

1 tablespoon of honey

1 tablespoon of dijon mustard

2 slices of bacon

1/4 cup red wine vinegar

6 tablespoons of olive oil plus extra to toss with beets for roasting

1 garlic clove

1/2 teaspoon of salt

freshly ground black pepper

  • Preheat oven to 400 degrees. Toss beets together with a drizzle of olive oil and salt and pepper. Roast until tender, approximately 40 minutes. Let beets cool to room temperature.
  • Make the vinaigrette. Start by cooking and then chopping the bacon. Mix honey, dijon mustard, red wine vinegar, olive oil, garlic, salt and pepper together. Add bacon last.
  • Toast walnuts in a pan until fragrant.
  • Finally, assemble your salad. Start with romaine, then layer in the beets, walnuts, feta to your liking. Drizzle the dressing over the salad and enjoy.

NOTE: We use about half the vinaigrette for our salad and then save the rest for our next salad.
