Breakfast Tostada

First, my directions on this are not very specific. I wandered into the kitchen post run and just created…I was super hungry and this is what I came up with. Sometimes things get a little crazy post run.


Vegetable Oil





Chipotle Powder


Cilantro Pesto

Refried Beans

1. Fry tortillas. I put about an inch of oil in my le creuset. Heated the oil over medium high heat. Then I placed the tortilla in, once golden brown I filled and cooked to golden brown. Then cool on a rack.

2. Make spinach. Add a touch of oil to the pan over medium high heat. Add minced garlic, then spinach and about 1/4 teaspoon of chipotle. I minced garlic clove. Sautéed until all of the spinach is wilted. Turn off and set aside.

3. Warm beans.

4. Fry eggs. Just a little touch of butter, crack two eggs. Cook to desired runniness.

5. Assemble. Tortilla, refried beans, (my husband made beans from scratch, I will try to put a recipe together. Homemade is so much better than canned.) spinach, eggs, drizzle salsa and cilantro pesto.
