One of my favorite breakfast restaurants makes this omelette. The Lazy Susan in Cannon Beach, Oregon. The other day I was day dreaming of it, so this is what I came up with.
2 eggs
1 Tablespoon of Half & Half
Butter
2 Tablespoons of Canned Diced Green Chilis
1 Tablespoon Diced White Onion
1 Heap of Jack Cheese
Salsa
Sour Cream
Green Onions
Salt and Pepper
-Crack eggs into a bowl and whisk together until whites and yellows are fully mixed. Sprinkle a solid pinch of salt and whisk again until just incorporated. Add in half & half and whisk again until just incorporated.
-Warm pan over medium heat, coat with butter. I use about half a tablespoon of butter. Then slowly pour the egg mixture in. Now, get a spatula and slowly keep the eggs moving using little circles. If you do not stir, the eggs will brown. So keep stirring until you have hit the 80% of the way cooked. Now, turn the burner to your lowest setting. Add in chilis, onions and cheese. Then fold over one side, and roll onto plate folding other side in.
-Top with sour cream and salsa, finish with green onions. (DG felt this omelette had too much sour cream. My response, can you really have too much sour cream?)
-Served with watermelon and crispy potatoes.
