We have been making a lot of salads this summer. I love to use stone fruit in salads, this could be my favorite.


Greens of your choosing (I used an Italian Blend)

Nectarines (cut to bite size pieces)

Prosciutto (loosely torn)

Chiffonde Basil

Mozzarella (torn to bite size pieces)

Castonovoa Olives


6 Tablespoons of Olive Oil

4 Tablespoons of Red Wine Vinegar

1 Teaspoon of Dijon Mustard

1 Teaspoon of Honey

2 Tablespoons of Parsley

1/2 a Minced Garlic Clove


-Toss all of your salad together. I don’t really measure salads, I just make what we need. I used a bag of lettuce blend to make things quick and easy.)

-Make dressing. I put everything into a glass measuring pitcher and then used an immersion blender to blend. This typically allows enough dressing for two salads.

-Drizzle dressing and toss together.
